ELDERFLOWER GIN & TONICS

Ingredients
2 oz St. George Botanivore Gin
6 oz Fever Tree Elderflower Tonic
2 pink grapefruit slices
A few juniper berries
Rosemary sprig

Instructions
Chill the drinking glass for a half hour. Add ice to the glass. Squeeze one slice of grapefruit into the glass and discard. Add the other grapefruit slice, the juniper berries, and rosemary sprig to the glass. Pour gin into the glass. Add the tonic and stir before drinking.

SMOKE + MIRRORS COCKTAIL

Ingredients

½ ounce absinthe
2 ounces mezcal
1 oz st. elizabeth allspice dram
2 dashes angostura bitters
rosemary sprig, for garnish

Instructions
Pour absinthe into a rocks glass; swirl to coat, and discard liqueur. Fill a cocktail shaker with ice, then add mezcal, st. elizabeth, and 2 dashes of bitters. Strain cocktail into a glass over ice. Light rosemary with a lighter or culinary torch until smoking and place it in the glass. Serve immediately.

CLASSIC MANHATTAN


Ingredients
Ice, for stirring
2 ounces rye or bourbon (I like Bulleit Rye)
1 ounce sweet vermouth (I like Dolin or Carpano Antica)
2 dashes Angostura bitters
1 Luxardo cherry or other cocktail cherry, for garnish

Instructions
Fill a mixing glass a few inches high with ice. Add the whiskey, vermouth and bitters. Stir in a circular motion for about 30 seconds, or until the drink is very cold (if you’d like a drink with less bite, stir longer). Strain the liquid into a coupe or martini glass. Garnish with a cocktail cherry. Enjoy.

SPICED PEAR BURBON COCKTAIL

Ingredients
1 1/2 ounces bourbon
1 1/2 ounces pear purée (recipe below)
1/4 ounce ginger liqueur
1/4 ounce agave nectar
1/2 ounce freshly squeezed lemon juice
1/4 teaspoon allspice dram Soda water to taste
2-3 dashes Hella Bitters Aromatic Bitters (from the Craft Your Own Bitters Kit)
Freshly cut thyme or sage sprigs for garnish

Instructions
In a cocktail shaker, add the bourbon, pear purée, ginger liqueur, agave nectar, lemon juice, and allspice dram.
